Pick-a-Pep peppers are especially suitable to use in a fresh salad. Red peppers are also delicious as a snack or fill them with spiced mincemeat and bake them in an oven. Peppers contain lots of vitamin C!
Tip: Roasted peppers with goat cheese rolls.

Ingredients:
4 large red peppers, 1 lemon, 150g. fresh goat cheese, 2 tablespoons olive oil (extra virgin) 1 tablespoon finely chopped basil or parsley, freshly ground black pepper, cocktail skewers.
Preparation:
Preheat the oven to 225 degrees C. Put the peppers on the griddle in the middle of the oven. Roast the peppers about 15 minutes until the skin is blackened. Put the peppers in a bowl, cover it and let them cool for about 15 minutes. Grate 1 teaspoon of yellow lemon skin. Press half a lemon. Crumble the goat cheese into a bowl and stir the grated lemon, 1 / 2 tablespoon lemon juice, olive oil and basil through. Add pepper to taste. Cut the peppers into quarters. Pull the skin off and remove the seeds. Pat the peppers dry with paper towels. Put the goat cheese mixture on top and wrap the pieces of pepper. Always start with the pointy side.
